Uncooked Tomato Pasta Sauce

4 C          Tomatoes cut into large chunks (mix varieties)
1- 2          Cloves garlic, minced
1/2            Medium onion finely chopped
3-4 Tbsp    Balsamic vinegar
  4   Tbsp    Extra Virgin Olive Oil
  3   Tbsp    Coarsely chopped fresh basil (optional)
                   salt and pepper to taste
                   Parmesan cheese, grated

Drain juice from tomatoes, if you want; add garlic, onion, vinegar, olive oil, basil if you are using it, salt and pepper. 
                                                         Let stand at room temperature for 15 - 20 minutes. 
                                                         Add warm pasta and mix. Serve topped with grated cheese.
